Homemade Gingerbread Men Cookies

If there’s one cookie that screams “CHRISTMAS” it would have to be gingerbread, yet it’s the one cookie I had never made. This year I remedied that.

Quick and Easy Gingerbread Man Cookies

3 Cups Flour

3/4 Cup Light Brown Sugar (dark brown sugar could be used also)

1 Tbsp Ground Cinnamon

1 Tbsp Ground Ginger

1/2 tsp. Ground Cloves

1/2 tsp. Salt

3/4 tsp. Baking Soda

3/4 Cup Softened Butter, cut into pieces

3/4 Cup Molasses

2 Tbsp. Milk

These cookies turned out crispy along the edges but chewy in the middle and they were excellent with and without frosting, and for this I am — Simply Grateful.

Quick & Easy Gingerbread Men Cookies

Ingredients

  • 3 Cups Flour

  • 3/4 Cup Light Brown Sugar (dark brown sugar could be used also)

  • 1 Tbsp Ground Cinnamon

  • 1 Tbsp Ground Ginger

  • 1/2 tsp. Ground Cloves

  • 1/2 tsp. Salt

  • 3/4 tsp. Baking Soda

  • 3/4 Cup Softened Butter, cut into pieces

  • 3/4 Cup Molasses

  • 2 Tbsp. Milk

Directions

  1. Combine flour, sugar, and spices in food processor.
  2. Process 10 seconds, until combined.
  3. Add cut up butter to food processor.
  4. Process 15 seconds until it resembles fine meal.
  5. With machine running add molasses and milk.
  6. Process 10-15 seconds.
  7. Scrape dough onto parchment paper.
  8. Cut dough in half.
  9. Roll each half out between sheets of parchment paper.
  10. Roll dough to 1/4″ thick and then place in freezer for 20 minutes.
  11. Cut out gingerbread men and transfer to parchment lined cookie sheet.
  12. Bake 8 minutes in 350 oven.
  13. Cool 2 minutes on cookie sheet then remove to cooling racks.
  14. Decorate as desired.
